These very yummy cookies found their name through a highly scientific/analytic process....Nicole and I chose 3 names and let Joy choose the winner by licking Nicole's face per the number of the name she liked. Cranberry Blitz Cookies won. Good Job, Joy dog! (If she's lucky she'll get to try a bit).
Recipe:
2 cups softened butter
2 cups flour
2 cups sugar
4 cups quick oats
2 tsp. baking soda
(4) 1/3 cup walnuts
1 1/2 cups craisins/dried cranberries
1/2 cup water
Amaretto oil/extract (to desired taste)Bake at 350*
-In a large (and I mean LARGE) mixing bowl combine flour, sugar, oats, Craisins, and baking powder. Use hands to evenly combine ingredients.
-This step can be done in a few different ways, but we lack a food processor so I used good ol' elbow grease for this. Crush the walnuts (if not bought crushed) and combine into dry ingredients.
-Add butter. (I started mixing this in with a spatula but found that because of the mass quantity of dry vs.wet ingredients, it was easier to mix with hands.)
-Add water. (This helps to add a bit of moisture to the mix, making it easier to combine and stick)
-Add amaretto oil/extract and continue to mix/knead. (This is just done to your desired taste. I love amaretto so ours went a bit heavier on it.)
- Once ingredients are evenly mixed, use a cookie scoop or small ice cream scoop to scoop out mixture and mold into small balls. Partially flatten the balls of mixture and place on cookie sheet.
-Bake for 12-15 mins.
For night #1 I can say this was a no fuss, easy recipe to start with and the house smells wonderful! We enjoyed the sounds of Delilah and Christmas tunes while making these. Nicole played cookie molder and photographer for us, while Joy played the part of a live Black and Decker. =)
