Day #2- Butterscotch Haystacks

Both Nicole and I had plans tonight but, as promised, we pushed through and made day 2's creation...at 10:00 tonight. On my way home from "My Fair Lady" rehearsal, I called Nicole and sure enough she was already starting on this wayy too-good-to-be-true quickie.

Meet our Butterscotch Haystacks!

Recipe:
1 cup creamy peanut butter
6 oz. butterscotch chips
1 large can of Chow-mein noodles
1 1/2 cups of semi or dark chocolate chips

-In a sauce pan, melt the peanut butter and butterscotch together on the stovetop.
-Pour the Chow-mein noodles into a large mixing bowl, pour the melted mixture in, and mix well!
-On waxed paper, drop spoonfulls of mixture into little "stacks"
-Freeze stacks for a couple of hours or until dry and hardened
-Melt chocolate chips in a saucepan and pour chocolate over the haystacks.
-Allow stacks to dry and harden with the chocolate drizzle
-Store at room temperature and enjoy!


Yum, right? Um, understatement of the week! I havent even tried one of ours yet (they are currently outside freezing) but licking the spoon/spatula was heavenly.
